Sardines: Tastier Than You Think

To pimp the company's product for a bit, not only did I like Corby Kummer's online video about knives from last month, but I like this month's edition -- about grilled sardines and other oily fish -- even more. I like the gross canned sardines, too, but, obviously, this is a superior fish when cooked properly.

There's been a lot of hype about YouTube over the past twelve months, but I think the real digital revolution is likely to be things a little bit more like this: Medium-sized organizations capable of mustering a bit more quality in terms of production values moving in on the terrain of television.

Humble tinned sardines packed in olive oil are indeed yummy, as is humble tinned tuna packed in olive oil.

It's the inferior oil used in many canned fish products that leads to bad perceptions.

Tangentially, I once went to a tapas bar in Barcelona that only served tinned items. Yummy place.

For an ultra-low effort snack, I recommend tinned sardines with Pickapeppa sauce.

notice the chef in the fancy restaurant was covertly using sriracha hot sauce (we call it "ROOSTER SAUCE") which is ubiquitous in asian noodle houses. he took off the cap, but the shape of the bottle is unmistakeable.

the more oily a fish is, the better it tastes AFAIK. i can eat saba all day :)

Eating low on the food chain seems a wise strategy.

I find it curious that Corby would encourage the mass consumption of a species so obviously in danger of collapse. He seems proud about feeding down the food chain. It doesn't surprise me at all that people think sardines taste good. People think caviar tastes good. I hear sea turtle tastes wonderful.

Yup. Mackerel is damn yummy.

Same reason you can't fuck up when you cook salmon. And same reason folks pay top dollar for toro sushi.

i can't believe i'm posting twice in here, but he recommended them because mackerel, herring, and sardines are plentiful and well managed, as opposed to tuna and say, cod (which are almost depeleted)

basically, your "fish-in-a-can" (aside from tuna & salmon) is fine, and better fresh from a fancy restaurant (duh!)

remember, sardines aren't just for poor people! god! what year is it?

King Oscar brand Mediterranean Style sardines in olive oil with garlic powder, red bell pepper, and black olives are a staple in my kitchen. Delectable right out of the can, with a toasted crusty whole wheat Portuguese roll and a bit of butter.

High-quality plain sardines mashed up and mixed with mayonnaise on good whole wheat bread with lettuce or sprouts makes a lovely sandwich.

If you can find fresh sardines -unfortunately not easy in the US- (it works with fresh anchovies too), I suggest you try to eat them uncooked (just marinated):
- you have to separate the filets from the bones and the head,
- you put a bit of salt on the filets, and then marinate in lemon juice, olive oil adding according to your taste garlic, basil, pepper.
