Matt the best way to cook butternut squash is to cut in half, then remove seeds. Cover flesh with olive oil. then bake at 350 until the flesh is soft. Scoop flesh out, add butter and salt. mmmm! Have fun Matt

Butternut squash makes the best soup. Make it with leeks and onion, celery, what have you -- in chicken broth. Add the cut-up, peeled squash. When soft, puree it all in a food processor. Return to heat. At the end add plenty of fresh grated ginger, salt to taste, a dash of cayenne pepper, and finish with a 1/4 to a half cup heavy cream.

Use any basic squash soup recipe for proportions. Everyone loves this.

Butternut squash is also good in chili. I make a vegetarian chili that calls for it. Peeling the squash isn't the easiest thing to do, so I think I'll try microwaving first as the video suggests.

The best way to eat it is to cut in half, scoop out seeds, put in some brown sugar and butter, and stick it in the oven. MM mm mm. No peeling required!
